Thandai Tart

Ingredients for Crust:  

  • 1 package chocolate wafer cookies

  • 4 tbsp. unsalted butter, melted 

  • ¼ tsp. Salt

Preheat oven to 350.  In a food processor, crush chocolate wafers until finely ground. Add melted butter and salt and pulse until it comes together.  

Press evenly into a 9 inc- pie tart pan with removable bottom.  Bake for 12 minutes.  Let cool completely.

Ingredients for Pie:  

  • 1 package chocolate wafer cookies

  • 2 pints Malai Thandai ice cream

Let ice cream soften for 15 minutes at room temperature until it’s easy to scoop. Scoop into cooled pie crust and spread with a butter knife or offset spatula until an even layer forms. Place in freezer until the ice cream is frozen solid again - about 3 hours.

Ingredients for Toppings:  

  • 1 cup heavy cream

  • 2 tbsp. granulated cane sugar

  • ½ tsp. Salt

  • 2 tsp. Rose water 

  • Rose petals for garnish

When ready to serve, make the whipped cream. With an electric mixer, beat together heavy cream, sugar, salt and rose water until stiff peaks form. Spread onto hardened ice cream. Sprinkle with rose petals for garnish.
