Browned Butter Blondies and Confetti Sweet Milk Ice Cream Sandwiches
These blondies are festive and delicious. The whole wheat flour and browned butter resemble the taste of graham crackers, which pairs perfectly with the fennel seeds that are present in the blondies. This pairs perfectly with our Confetti Sweet Milk and Sea Salt Vanilla ice creams. You can also cut them up and build a sundae with them! They are perfect for a celebration! Ingredients for Crust:
1 cup butter, melted and browned and cooled to room temp

1 cup AP flour
1 cup Whole Wheat flour
1 tsp. baking powder
1 tsp. salt
2 cups brown sugar
2 tsp. ground fennel seeds
2 flax eggs
2 pints Malai Confetti Sweet Milk Ice Cream
Non-stick spray
Directions
1. Preheat oven to 350 degrees. Spray a Great Jones Hot Dish with nonstick spray.
2. Make 2 flax eggs by taking 2 tbsp. ground flax seeds and mix with 5 tbsp. water and set aside
3. In a small pan over medium heat, toast 1 tbsp. whole fennel seeds until slightly darkened in color and toasted (approximately 4 minutes). Grind the toasted fennel seeds in a coffee or spice grinder (or mortar and pestle).
4. In a bowl, whisk together flours, baking powder, and salt.
5. In a separate bowl, whisk together browned butter and sugar until well combined. Add flax egg and toasted ground fennel seeds.
6. Mix wet ingredients with dry ingredients and pour into prepared Hot Dish pan. Bake for 25-28 minutes, until tester comes out clean.
7. After cooled, cut into squares. Place one scoop of Confetti Sweet Milk ice cream on one square, and top with another square to make an ice cream sandwich. Serve immediately or wrap in parchment paper and freeze.
Turn Your Blondies into a Crumble Topping!
Procedure:
1. Let blondies cool completely. Preheat the oven to 350 degrees and prepare a baking sheet with parchment paper. Slice the cooled blondies in 1 inch by 4 inch rectangles. Remove them from the pan and arrange them on the baking sheet. They don't have to be spaced apart, but they should not be touching.
2. Place in the oven for about 10-12 minutes until the blondies are crisp around the edges, and a shade darker. Let cool on the baking sheet.
3. To serve, scoop your favorite ice cream into a bowl. Place two blondie "sticks" on top, or crumble them onto the ice cream scoops.
