Cornflakes Chevdo Ice Cream Topping
Chevdo is a general name for a dry snack in Gujarati, and my most favorite has always been the corn flakes kind. It's mixed with sugar and salt and spices, that makes it perfectly primed to become addicting. Chevdo is typically served with tea, but this sweet salty snack is delicious on ice cream. This simplified version can be made very quickly and adds a satisfying crunch to your bowl of Malai.
2 tbsp. oil
1 tbsp. sugar
1.5 tsp. salt
1/2 tsp. turmeric
1/4 tsp. red chili powder
6 cups cornflakes cereal
In a large skillet, heat 2 tbsp. neutral oil over medium heat. Once hot, add sugar, salt, turmeric and red chili powder, stirring quickly for about 10-15 seconds, until the spices have become incorporated with the oil. Add the cornflakes, and stir to allow all of the cornflakes to be coated in oil. Continue to stir on the heat for about 3 minutes, until the cornflakes get some color and have crisped up slightly. Taste and adjust salt as needed. Let cool and serve as a topping for ice cream. Store in an airtight container for up to a month.
