Chocolate Cardamom Sauce
I think it's hard not to agree that one of the most satisfying and decadent desserts is a delicious hot fudge sundae. There is just something about the sheer chocolatey goodness with the coolness of the ice cream that makes everything seems right with the world. We amp up the flavor with some cardamom, which brings out the floral notes of chocolate, and makes this, well, the best.
Ingredients:
½ cup unsweetened cocoa powder
1 cup sugar
½ tsp. salt
½ cup water
1 tsp. ground cardamon
Whisk together cocoa, sugar and salt in a saucepan. Add water and bring to a boil over medium heat, stirring constantly. Continue stirring, and reduce to a simmer for about 30 more seconds. Add cardamom and let cool for about 10 minutes. Spoon over a scoop of your favorite ice cream (some fantastic pairings are: Turkish Coffee, Rose with Cinnamon Roasted Almonds and Orange Fennel). Store any leftover sauce in a sealed container in the refrigerator for up to 2 weeks.
